Wine is one of the most popular alcoholic beverages in the world. It is made from one or several grape varieties which play the most important role in quality of wine. The process of winemaking which ends with bottling of wine starts already in vineyard and careful selection of grapes that is grown for production of wine.
Grapes used for making wine is grown in plantations which are known as vineyards, while production and study of grapes used for winemaking is called viticulture. Viticulture should not be confused with oenology or enology, a science and study of all aspects of wine and process of winemaking.
Wine is produced by fermentation of crushed grapes. During the process of
fermentation or transformation of grape juice into an alcohol various yeast interact
with sugars in grape juice producing ethanol, carbon dioxide and many other
by-products on which greatly depends quality, complexity, taste, aroma as well as
the type of wine. Winemaking is a complex process which requires a special procedure
although all experts agree that quality of the grapes plays the most important role
in quality of the wine.
Winemaking and consumption of wine has a long tradition. It is believed that wine was made in the area what is today Georgia and Iran already 6000 BC. Wine was also one of the most popular alcoholic beverages in ancient Greece and Rome, while its importance also clearly indicate pantheon of Greek and Roman gods which also include the gods of wine: Dionysius in Greece and Bacchus in Rome.
